Stuffed Mushrooms

These stuffed mushrooms are very low in calories and super healthy for you.  Stuffed Mushrooms

Ingredients:  1 large tub of cremini mushrooms, 1 white onion, 6 cloves garlic, veggie stock, salt & pepper, fresh flat leaf parsley, lemon

Optional:  parmesan or vegan parmesan

Start by washing the mushrooms with a damp paper towel.  Remove the stems and core out each mushroom, save the stems and insides of each mushroom.  Saute the chopped mushroom stems and insides, onion, garlic, with a few tablespoons of veggie stock until the mushrooms are cooked and the onions are translucent.  Fill each mushroom cap with this mixture, top with the optional cheese and place on baking sheet.  Bake at 350 degrees for roughly 25 minutes.  Top with chopped fresh parsley and a squeeze of fresh lemon juice.

Calories per mushroom(no cheese): 8 to 10

*Add 7 calories per teaspoon of parmesan added
