Spaghetti and meatballs
This meal is the most requested meal at my house – kids and adults alike.
Meatballs – depending on your personal preference you can use whatever type of meat you like. I like to lighten it up with a combination of ground turkey or chicken combined with a spicy Italian sausage (chicken or pork), but of course you can use ground beef, instead of the ground chicken, the meatballs will just be more dense.
1 lb. ground turkey
1.5 cups bread crumbs
1/2 cup milk or buttermilk
4 minced garlic cloves
salt & pepper
1/2 teaspoon red chili pepper
1 teaspoon oregano
1 teaspoon basil
Let the bread crumbs sit in the milk or buttermilk until soft (20 mins), then combine the rest of the ingredients and form the meatballs with your hands, place on rimmed baking dish. Cook at 350 degrees for around 30 mins.
While the meatballs are baking, get your red sauce started on the stove top. In medium sauce pan, add 4 tablespoons olive oil, with two large cans(28oz) crushed tomatoes or tomato sauce if that is all you have. Use a garlic press to add 6 cloves of garlic, then add 1 teaspoon oregano, basil, and red pepper, season with salt and pepper.
