Here is a super tasty, easy and quick meal. I like to swap out regular pasta for quinoa pasta, making it very healthy, too.
I read in a magazine that Italians make this all the time, but the article did not have quantities of the ingredients listed, so I had to play around with the right amount of liquid. You can add additional liquid if the pasta isn’t done and season to taste.
4-6 fresh vine ripened tomatoes – chopped
6-8 cloves garlic – diced
1 medium white onion- diced
3 Tablespoon Extra Virgin Olive Oil
6 servings pasta – I like penne for this but any variety will work
1 Tablespoon red pepper flakes
Salt & Pepper
3 to 4 cups water or just over the pasta
Cook over medium high heat, done in about 15 mins. Quinoa pasta takes a little more time to cook, if you are using regular pasta, it will be more like 5 to 7 minutes.
Serve with fresh parmesan
