I like to cook the way I like to eat - fresh, healthy and nothing prepackaged. This can be expensive and time consuming, so I try and find recipes that are fast and that don't have too many ingredients that are outside my ordinary pantry stock. Lately, I have taken a serious interest in plant based eating and all the health benefits it brings. I can't say that I am 100% vegan or will ever be but the benefits of eating more plant based meals is obvious. I have had to watch my weight my entire life, if I can continue to do so and help the environment - all the better. Cooking is all about experimenting - I hope you will try some of my ideas and enjoy!
