    Cabbage harvest & canning spicy slaw

    I was successful in growing 5 beautiful heads of cabbage this year.  But after a squirrel ate one of them, it was time to harvest the rest.  What do you do with 5 heads of cabbage???  I decided on making and canning a big batch of spicy slaw.   I love this spicy slaw on burrito bowls or tacos, any kind ….veggie (sweet potato & black bean), fish, shrimp and even fish or crab “less” tacos.   Tacos are perfect for a quick dinner option, but the slaw takes a little extra time and if you are not stocked with the ingredients below, it’s not really a quick throw together meal ~…

    I recently ordered the cookbook, The Engine 2 diet, by Rip Esselstyn. He’s got some good recipes, all vegan, but they are pretty plain. I have modified his version of banana french toast and it is divine! Vegan Banana French Toast 6 – 8 slices of bread (I have made this with sourdough and nutty whole wheat and both are good) 2 very ripe bananas 1 cup coconut milk (or whatever type of milk you want to use) 1 Tablespoon of pure vanilla extract 1 teaspoon pumpkin pie spice 1 cup flour (or so) for drenching 1 to 2 tablespoon coconut oil for the pan In Rip’s version, he does…

      We are back from Europe after two weeks of adventure, laughs, relaxation, and revived perspective.  The food was outstanding and the weather was a great combination of sunny hot days with a few rainy ones here and there.  We started and ended the trip in Vienna, touring Italy and Switzerland for a few days in the middle.  Austria is a great place to travel, especially in summer because of the unlimited outdoor activities and amazing landscape.  Extra measures are taken to preserve architecture, as well as, maintain it’s beautiful clean mountains and streams.  We saw lakes that are as clear as I’ve ever seen and air so fresh it rivals…

    What to serve for dinner that picky kids will eat, versatile enough for vegan/vegetarians, and still be healthy?  The answer is fajitas!  Chicken and/or veggie, with refried beans, spanish rice and guacamole.  I am guessing that a lot of moms end up eating the way their families prefer to eat.  When you offer a meat option but everything else plant based, it accommodates everyone.   Marinate the veggies and the chicken in the following marinade for about 2 hours prior to grilling.  This marinade was enough for 2 lbs of chicken and then I made another batch for roughly the same amount of veggies.  I use chicken thighs, trimmed of…
