    Fun ways to use up those leftovers!

    Happy New Year!  I hope you are all enjoying your family and friends and some relaxing time together.  With the holidays, it’s easy to throw out a lot of leftovers, especially if you are treating your guests to many home cooked meals.  I really don’t like to throw away food, so I’ve come up with some fun and delicious ways to use up those leftovers! Left over salad – I love left over salad on a toasted bagel, but it’s also good sautéed in an omlete (egg or egg substitute) or just sautée and add an egg to the top for breakfast the next day.
