Elegant dinner of Seafood Provencal with vegan sides
Seafood Provencal makes an elegant dinner for family and friends. In keeping with my “flex” meal planning, I prepare all the sides as vegan or plant based. This gives everyone options, if they want seafood they can have it but there’s always plenty of plant based sides to fill up on. This recipe is easy and quick, but you wouldn’t know that by the taste! The original recipe is Ina Garten’s but I have altered hers to eliminate the butter and swapped regular onions for shallots(because I didn’t have any). Vegan breakfast – pancakes, french toast and quiche..oh my!
I recently ordered the cookbook, The Engine 2 diet, by Rip Esselstyn. He’s got some good recipes, all vegan, but they are pretty plain. I have modified his version of banana french toast and it is divine! Fall Wedding
My husband and I just returned from my cousin’s wedding in Delaware last weekend. While hurricane Matthew made the day a little rainy, it was still a beautiful fall event. Most people think of pumpkins, candy corn and Halloween this time of year but I loved her colors. It was an outdoor setting with a full pavilion for cover from the rain (thank goodness). Fall is finally here!
Our weather has finally cooled down and it’s enjoyable to be outside. To take advantage of this, we fit in some fun fall traditions this past weekend. On the list was the neighborhood pumpkin patch, searching for Halloween costumes, and adding some fall touches around the house. We rounded out our fall welcome weekend with roasting a turkey and watching Sunday afternoon football. I know we are a long way from Thanksgiving, but I love roasting a turkey any time of year.
