Easy and Delicious Christmas bon bons

A few years back my aunties put together a cookbook of old family recipes, some of my all time favortes are christmas cookies. My grandma used to bake for days around the holidays and then she kept stacks of tuperware bins filled with cookies in her back bedroom closet (the coldest in the house). Any time anyone stopped by, she put out a plate of various cookies.  Those cookies were beyond delicious and the memories just as sweet.  If I had to pick a favorite, these peanut butter bon bons would probably be it.  The best part is how easy and quick they are to make.

Peanut Butter Bon Bons

Step 1

Microwave 2 cups peanut butter and 1/2 cup butter in a plastic bowl for about 1 minute or until soft.  Add 3 cups rice krispies and 4 cups powdered sugar to the softened butter mixture, stir until combined.  Chill for 1 hour.

 

Step 2

Form the mixture into individual 1 inch balls. 

 

Step 3

Melt half a bag of chocolate chips or several of your favorite chocolate bars over a water bath, adding a little milk(1 to 2 Tablespoons) or coconut milk to get the right consistency to dip the peanut butter ball into the chocolate. I find using a spoon is the easiest way to move the ball around in the chocolate to cover and then place back on the sheet pan.

 

Step 4

Then place the bon bons onto a parchment lined sheet pan and into the freezer for at least two hours before serving.  Typically, I leave the bon bons in the freezer overnight and then transfer into a large freezer bag and store them there for whenever I have guests or make up a christmas cookie gift box for friends.
