I am lucky enough to have a book full of old family Christmas cookie recipes. I don’t eat a lot of sugar but around the holidays I give in to a few indulgences. If you do, too, give these peanut butter bon bons a try! The best part about these bon bons, is that they are really easy to make and you don’t even need to turn on your oven!
Peanut Butter Bon Bons
Microwave 2 cups peanut butter and 1/2 cup butter in a plastic bowl for about 1 minute or until soft. Add 3 cups rice krispies and 4 cups powdered sugar, stir until combined. Chill for 1 hour, then form the mixture into individual 1 inch balls. Melt half a bag of chocolate chips or several of your favorite chocolate bars over a water bath, adding a little milk(1 to 2 Tablespoons) or coconut milk to get the right consistency to dip the ball into the chocolate. Then place the bon bons into the refrigerator for at least two hours before serving.
These can also be frozen to be served anytime during the holidays.
