When I visited Barcelona, I fell in love with the roasted Padrón peppers served at nearly every tapas restaurant we came across. It’s very hard to find these peppers in our local stores. The Japanese cousin of the Spanish Padrón pepper is the Shishito pepper, which is so similar you might not even tell the difference. My local grocery always has Shishito peppers in stock. Spicy Indian Dal – healthy, hearty and extremely tasty!
Dal is a traditional Indian soup which is typically served with Naan bread or over rice. It’s super healthy, vegan and full of flavor! Pueblo, Colorado – interesting and beautiful with a cool vibe
I am not exactly sure why I had a negative opinion about Pueblo, but in all my drives past it (via Dallas to Denver), I had never stopped to checked it out. On our return drive from Montana last week we ran into a few mishaps that turned into a fun outing. We began the first part of our drive by colliding into a very large white tail buck. Luckily, the deer did not appear to be injured and we only had minimal damage to the car. Salad on your morning toast or bagel…sounds crazy but it’s really good!
My last blog on vegan breakfast covered recipes that are a little heavier, what I would consider weekend fare. Here’s an idea for a quick and healthy vegan breakfast that is my go to. Salad on toast, sounds crazy but the tang of the vinaigrette gives it flavor and provides a great healthy start to the day.
