Versatile Meals – chicken OR veggie fajitas – vegan or not, everyone’s happy!
What to serve for dinner that picky kids will eat, versatile enough for vegan/vegetarians, and still be healthy? The answer is fajitas! Chicken and/or veggie, with refried beans, spanish rice and guacamole. I am guessing that a lot of moms end up eating the way their families prefer to eat. When you offer a meat option but everything else plant based, it accommodates everyone. Marinate the veggies and the chicken in the following marinade for about 2 hours prior to grilling. Vegan Butternut Squash Lasagna
I can guess what you’re thinking…a meat and dairy free lasagna? NO Thank you! But hear me out… I have made Giada De Laurentiis’ butternut squash lasagna for years, it is meatless, so all I reallly needed to change was the milk for the bechamel sauce and alter the cheese on top. You can find the original recipe here: http://www.foodnetwork.com/recipes/giada-de-laurentiis/butternut-squash-lasagna-recipe. I served this vegan option to my non vegan kids and they loved it. Most people don’t think to plant their lilies outside after the holiday have passed but lilies are great perenials! Depending where you live, you will want to check the zone and heat tolerance. Most variations of Easter lilies are hardy to zone 5. Also, be sure to plant after the last chance of frost has passed. While they only bloom once in the spring, their green foliage lasts all season.…

Drab to Fab -Stylish Chair MakeOver on a Budget
My favorite old chair needed help. It had great bones and was absolutely not going to the landfill OR a professional repholsterer (too expensive). I looked into all my options for updating furniture and even tried painting a small test area in the back – this was a total waste of time. The chalk paint I used did not cover the green faabric and made it very coarse, not comfortable at all. Unless you are painting a faux leather or plastic sofa or chair, I don’t see how this method would ever be OK. At this point I was committed to recovering,…
