I had wanted to grill artichokes for awhile now, but just hadn’t tried it. I found some great artichokes at my local grocery and on sale, so I decide to give it a try. This is really simple and so so good! Not to mention super healthy and very elegant. I used a salt stone on my grill but tin foil will work, too.
First start by boiling your artichokes and 1 to 2 lemons for about 20 minutes or until the stem or base of the choke is tender. Cut the lemons in half and squeeze the juice into the water prior to boiling. Prepare an ice bath for the chokes, to prevent over cooking after you boil them. Once they have been cooled in the ice bath, drain and cut the artichokes in half (top to bottom). Remove the purple leaves and “hairy” center, leaving the edible leaves and tender heart. Top liberally with the oil of your choice, I used olive oil and season with salt and pepper. Another option is to use lemon pepper. Then squeeze a fresh lemon on top. Let sit for 20 to 30 minutes while you start your grill. Place insides down and grill for about 20 minutes of using a salt stone or 5 to 8 minutes per side if using foil. Serve with mayo and fresh lemon wedges.
