Roasted Veggie Wonton Wrappers

Wonton Cups stuffed with Mushrooms

Roasted veggies have a ton of flavor, so much so that you won’t miss any meat or dairy in this very healthy low calorie appetizer!

Ingredients:  Wonton wrappers, 1 onion, 1 head garlic, 2 poblano peppers, 2 red bell peppers, 1/2 cup chopped kalamata olives

Chop the top of the garlic head off to exose most of the tops of each clove, then place a small amount of tin foil around the bottom of the garlic and place on baking sheet.  Add the rest of the vegetables and roast for 30 to 40 minutes on 350 degrees.  Once cooled, chop the veggies and add the olives.  Place the wonton wrappers in a muffin pan, adding the filling to the center.  Lightly add a little water to the edges of the wonton wrappers.  Bake at 350 degrees for 12-15 minutes.

Serve with Spicy Green Goodness Sauce – blend two cups spinach, 4 cloves garlic, one fresh jalapeno (seeded), one avocado, juice from one lime, veggie stock and salt and pepper to taste.  Slowly add the veggie stock while blending to get the consistency right (roughly about a 1/2 cup).

FYI – wonton wrappers are not typically vegan, but dumpling wrappers are more readily available in vegan varieties.
